Blueberry Corn Muffins
Preheat the oven to 400 degrees.
1 1/2 cups all-purpose flour
1/2 cup whole wheat flour
1/2 cup cornmeal
1/2 cup sugar
2 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup buttermilk
1/2 cup orange juice
1/2 cup butter melted
1 egg beaten
1 Tablespoon grated orange zest
2 cups fresh blueberries (1 pint)
Grease 12 muffin cups In a large
bowl, combine the all-purpose flour,
whole wheat flour, cornmeal, sugar,
baking powder, baking soda, and salt.
In a small bowl, combine the buttermilk,
orange juice, butter, egg, and orange
zest. Add to the flour mixture and
mix just until the dry ingredients
are moistened. Fold in the blueberries.
Scoop the batter into the prepared
muffin cups and bake 15-20 minutes
or until a wooden toothpick inserted
in the center comes out clean. Turn
out on a wire rack to cool.

Each morning you will
enjoy one of Diane's homemade muffins or
coffeecake perfected over the years. "Jersey
Fresh" vegetables may be found in an entrée
of the day or perhaps we'll serve eggs benedict
with Canadian ham and asparagus. We alternate
our menu to sweet one day and savory the
next. A French Toast Strata with lemon and
raspberries with raspberry sauce is a much
requested sweet breakfast.

During the warmer weather
you will be served your breakfast outdoors
on the veranda where you can enjoy your
steaming coffee and generous serving of
homemade muffins, fresh fruit and entrée.
Early coffee is always available before
7:00 a.m. You can choose an early seating,
8:30 a.m. or take a bicycle ride early and
come to breakfast at the 9:30 a.m. seating.
Special care is always
taken of your special dietary needs, just
let us know at check-in or give us a call
before your arrival so we're prepared for
you.
Early
each afternoon you'll smell those special
cookies baking for tea time. Chocolate chip
biscotti, brownies, or just simply chocolate
chip cookies. Our daughter, Christine teaches
photography at Paskack Valley High School.
Each year she brings her best students to
Cape May to shoot for the day, but the highlight
of the day is Mom's Chocolate Chip cookies!
We also serve a savory such as homemade
pizza with "Jersey Fresh" tomatoes and fresh
basil.
